Prepare the Filling
In a mixing bowl, finely chop the Chinese sausage and combine it with the chopped shrimp, soy sauce, sesame oil, beaten egg, green onions, ginger, garlic, and white pepper. Mix well until all ingredients are evenly incorporated.
Assemble the Siu-Mai
Lay a wonton wrapper on a flat surface. Place about 1 tablespoon of the filling in the center of the wrapper. Gather the edges of the wrapper up around the filling and pinch to seal, leaving the top exposed. Repeat with the remaining wrappers and filling.
Steam the Siu-Mai
Prepare a steamer pot over boiling water. Arrange the siu-mai in the steamer basket, making sure they do not touch each other. Cover and steam for about 10-12 minutes or until the shrimp is cooked through and the wrappers are translucent.
Serve
Carefully remove the siu-mai from the steamer and serve hot with soy sauce or your favorite dipping sauce.
