Prepare machine and tools

Fill the espresso machine reservoir with fresh, filtered water if needed. Turn the machine on and allow it to heat fully (typically 15–30 minutes) so group head, portafilter and cup reach stable temperature.

Preheat cup and portafilter

Run a short blank shot (no coffee) or flush hot water through the group head into your shot glass or demitasse cup and through the portafilter to warm them. Discard the water.

Weigh and grind

Weigh 18 g of freshly roasted espresso beans. Grind to a fine espresso grind (texture like powdered sugar but not flour). Use a burr grinder for consistency.

Dose and distribute

Place the portafilter on the scale, tare, and dose the 18 g of ground coffee into the portafilter basket. Distribute the grounds evenly using your finger or a distribution tool to avoid channeling.

Tamp

Use a tamper to apply firm, even pressure (about 20–30 lbs / 9–14 kg) to the coffee bed. Level the puck by keeping the tamper flat. Wipe any loose grounds from the portafilter rim.

Brew

Lock the portafilter into the group head and start the shot. Aim for a 1:2 brew ratio: 18 g in to about 36 ml out. Target total extraction time of 25–30 seconds (from pump start to end of shot). Stop the shot at ~36 ml (or when the flow becomes thin and blonde).

Serve

Pour the double espresso (two quick shots in one, ~36 ml) into the preheated demitasse cup or shot glass. Serve immediately to preserve crema and aroma.

Adjustments (if needed)

If the shot extracts too quickly (<20 s) make the grind finer or increase dose slightly. If it extracts too slowly (>35 s) make the grind coarser or reduce dose slightly. Taste and adjust to preference.

Optional Cleanup

Purge the group head briefly to remove coffee residue, knock out the used puck, wipe the group and portafilter, and backflush the machine according to manufacturer recommendations at the end of the day.
