Prepare glass

Select a tall chilled glass (12–16 oz). If desired, add 4 ice cubes to the glass. Slap the mint sprig once between your palms to release aroma and rest it on top of the ice or the rim. Add a lemon wedge to the rim or squeeze lightly into the glass and drop it in.

Hold the chilled 330 ml bottle or can of San Pellegrino. Pour gently into the prepared glass at a slight angle to preserve carbonation, filling to about 1 cm from the rim. Pour slowly to avoid excessive foaming.

Give the glass a gentle swirl once to mix any lemon juice with the water. Taste and adjust garnish: add another squeeze of lemon or more mint if desired.

Serve immediately while effervescent. Replace bottle in a refrigerator or ice bucket to keep remaining water cold and fizzy.
