Method

Cocktail

  1. 1

    Prepare glass

Fill a large wine glass (or rocks glass) generously with ice cubes so the glass is about three-quarters full. Chilling the glass slightly before assembling helps keep the cocktail cold longer.

  2. 2

    Add Aperol

Pour 3 oz Aperol over the ice. Pouring first over ice helps the aperitif chill and creates a base layer.

  3. 3

    Add Prosecco

Slowly pour 3 oz chilled Prosecco into the glass. Pouring gently preserves carbonation — tilt the glass slightly and pour down the side if you want fewer bubbles.

  4. 4

    Top with club soda

Add 1 oz chilled club soda to give a light, effervescent finish. Stir gently once with a bar spoon (one or two slow turns) to combine without flattening the Prosecco.

  5. 5

    Garnish and serve

Slip one fresh orange slice onto the rim or into the drink as garnish. Serve immediately while cold and fizzy.
