Nigiri Preparation

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then simmer for 20 minutes. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

    Shape the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of raw or cooked fish on top of the rice.

    Serve

    Arrange the nigiri on a serving plate. Serve with a small dollop of wasabi and a small dish of soy sauce for dipping. Optionally, you can serve with nori sheets.
