Method
Preparing Sashimi
Slice the Fish
Using a sharp knife, carefully slice the tuna, salmon, yellowtail, and octopus into thin pieces, about 1/4 inch thick. Arrange 7 pieces on a plate.
Making California Roll
Prepare Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly.
Season the Rice
In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Gently fold this mixture into the cooked sushi rice. Allow the rice to cool to room temperature.
Assemble the California Roll
Place a bamboo sushi mat on a clean surface. Lay one nori sheet shiny side down on the mat. Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
Roll the Sushi
Using the bamboo mat, carefully roll the nori away from you, pressing gently to keep the roll tight. Seal the edge of the nori with a little water.
Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Repeat with the second nori sheet if desired.
Serving
Plate the Dish
Serve the sashimi on a plate alongside the sliced California rolls. Garnish with wasabi, pickled ginger, and soy sauce on the side.
