1. Prepare Ingredients
Dice the chicken breast, carrots, and slice the green onions. Mince the garlic. Make sure the cooked rice is ready and cooled.

2. Cook the Chicken
In a large skillet or wok, heat half of the sesame oil over medium-high heat. Add the diced chicken breast and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Stir-fry Vegetables
In the same skillet, add the remaining sesame oil. Add minced garlic, diced carrots, and green peas. Stir-fry for about 3-4 minutes until the vegetables are tender.
4. Scramble Eggs
Push the vegetables to one side of the skillet, crack the eggs into the other side, and scramble them until fully cooked.
5. Combine Ingredients
Add the cooked rice and the cooked chicken back to the skillet. Pour in the soy sauce, and mix everything together. Stir-fry for an additional 3-5 minutes to ensure everything is heated through and well combined.
6. Season and Serve
Season with salt and black pepper to taste. Garnish with sliced green onions before serving.
