FRY BREAD TACOS

    Prepare fry bread dough

    In a large bowl, whisk flour, baking powder, and salt. Pour in warm water gradually and stir until a soft, pliable dough forms. Knead lightly for 1-2 minutes, then cover and let rest 10 minutes.

    Heat oil and shape dough portions

    Pour oil into a heavy-bottomed skillet or pan to a depth of about 2 inches and heat to 350°F (175°C) while the dough rests.

    Shape and fry fry breads

    Divide the dough into two equal portions and shape each into a round about 6-7 inches in diameter. Carefully fry each round in hot oil until puffed and golden, about 2-3 minutes per side. Drain on paper towels.

    Season and form beef patties

    Season the ground beef with a pinch of salt and pepper. Shape into two even patties.

    Cook patties and onions

    In a skillet heated over medium-high, cook the beef patties 3-4 minutes per side until browned and reach 160°F (71°C). Add the sliced onion to the pan and cook with the patties until softened and lightly caramelized, about 2-3 minutes.

    Add cheese

    During the last minute of cooking, place a cheese slice on each patty to melt over the beef.

    Assemble

    Place each beef patty with melted cheese onto a fry bread. Top with caramelized onions. Fold another fry bread over to form a taco-style sandwich if desired, or serve open-faced with the fry bread as the shell.
