    Brown beef

    Heat olive oil in a large heavy pot over medium-high heat. Working in batches, sear the beef chunks until well browned on all sides; remove and set aside.

    Sauté aromatics

    In the same pot, add onion and garlic; cook until softened and translucent, about 5 minutes.

    Create base

    Return beef to pot. Stir in tomato paste and spices (cumin, chili powder, smoked paprika, oregano) and cook 1–2 minutes until fragrant.

    Add liquids and hominy

    Add beef broth, diced tomatoes with their juice, drained hominy, and corn. Stir to combine; scrape up any browned bits from the bottom.

    Simmer

    Add bay leaves, bring to a simmer, then reduce heat to low. Cover and simmer 90–120 minutes, or until beef is tender and flavors meld, stirring occasionally.

    Finish and serve

    Remove bay leaves. Adjust seasoning with salt and pepper to taste. Garnish with chopped cilantro and serve with lime wedges on the side.
