Make cheese crisps
Preheat a nonstick skillet over medium heat. Lightly grease with butter. Spoon an even mound of shredded cheddar (about 1 cup) onto the hot pan and press into a 6–7 inch circle. Cook until the edges turn golden and the center sets, 2–4 minutes. Carefully flip and cook 1–2 minutes more if you want a thinner crisp, then transfer to a plate to cool.

Prepare cheese filling
In a small bowl, whisk together cream cheese, chopped chives, minced jalapeño (if using), salt, and pepper until smooth and creamy.

Assemble folded crisp
If you created a single large disc, place a generous spoonful of the filling along one edge of the crisp and fold the other edge over to form a half-moon. If you made two discs, spread filling on one disc and top with the second disc, pressing edges to seal.

Return the folded crisp to the pan for 1 minute per side to warm through and help seal the fold. Remove to a cutting board, let rest 1–2 minutes, then slice in half and serve with salsa or a dipping sauce.
