Method

Shrimp

  1. 1

    Prepare the Shrimp

Peel and devein the wild shrimp. Rinse under cold water and pat dry with paper towels.

  2. 2

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add minced garlic (3 cloves) and sauté for 1 minute until fragrant. Add the shrimp, paprika, salt, and black pepper. Cook for 3-4 minutes until the shrimp are pink and cooked through. Remove from heat and set aside.

Grits

  1. 3

    Cook the Grits

In a pot, bring 4 cups of water to a boil. Stir in the stone ground grits and salt. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until thickened.

  2. 4

    Finish the Grits

Once the grits are cooked, stir in the butter and cheddar cheese until melted and creamy. Keep warm until ready to serve.

Tomato Gravy

  1. 5

    Prepare the Tomato Gravy

In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic (2 cloves) and sauté for 3-4 minutes until the onion is translucent.

  2. 6

    Combine Ingredients

Add the canned diced tomatoes (with juice), chicken broth, salt, black pepper, and red pepper flakes to the saucepan. Bring to a simmer and cook for 10-15 minutes to allow the flavors to combine.

Assembly

  1. 7

    Serve the Dish

To serve, spoon a generous portion of the creamy grits onto a plate, top with the sautéed shrimp, and drizzle with tomato gravy. Enjoy your delicious shrimp and grits!
