For the Seared Atlantic Salmon

Prepare the Salmon
Pat the Atlantic salmon fillets dry with paper towels. This will help achieve a nice sear.

Season the Salmon
Sprinkle both sides of the salmon fillets with salt and black pepper.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Salmon
Carefully place the salmon fillets in the hot skillet, skin-side down. Cook for about 4-5 minutes without moving them, until the skin is crispy and browned.

Flip the Salmon
Using a spatula, gently flip the salmon fillets and cook for another 3-4 minutes, or until the salmon reaches your desired doneness.

For the Stone Ground Grits

Boil the Water
In a medium saucepan, bring 4 cups of water to a boil over high heat.

Add the Grits
Once the water is boiling, slowly whisk in the stone ground grits to prevent lumps.

Add Cheese
Fold in the shredded cheddar cheese until fully incorporated and creamy.

Serve
Serve the grits warm alongside the seared salmon.
