Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C) to ensure it's hot enough to roast the chicken evenly.

    Prepare the Chicken

    Remove the chicken from any packaging and pat it dry with paper towels. This will help the skin to become crispy during roasting.

    Season the Chicken

    Rub the whole chicken with olive oil, ensuring that it is well-coated. Sprinkle salt, black pepper, garlic powder, and paprika all over the chicken, including inside the cavity.

    Add Aromatics

    Place the fresh rosemary sprigs and the halved lemon inside the cavity of the chicken for added flavor.

Cooking

    Prepare the Vegetable Bed (Optional)

    If using, chop the carrots, onions, and potatoes into large chunks and place them at the bottom of a roasting pan. They will absorb the chicken's juices and flavor while cooking.

    Roast the Chicken

    Place the seasoned chicken breast-side up on top of the vegetables (if using) in the roasting pan. Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) when tested at the thickest part of the thigh.

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for about 15 minutes before carving. This allows the juices to redistribute.

    Carve the chicken and serve it with the roasted vegetables, if used, and enjoy your delicious roasted whole chicken!
