Preparation of Filling

    Step 1: Boil Eggs

    In a pot, bring water to a boil. Gently add the hen eggs and boil for 10-12 minutes. Once done, transfer them to an ice bath to cool. Peel and chop the eggs.

    In a large mixing bowl, combine the finely shredded cabbage, grated carrots, and chopped green onions.

    Add the chopped boiled eggs, soy sauce, sesame oil, minced garlic, ground black pepper, and salt to the vegetable mixture. Stir well to combine all ingredients evenly.

Assembling Egg Rolls

    Lay an egg roll wrapper on a flat surface with one corner facing you. Place about 2 tablespoons of the filling mixture near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll tightly to form an egg roll. Seal the edge with a bit of water.

Frying
