Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper. Add the salmon fillets and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F or 190°C).

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 4-6 minutes on each side, or until the salmon is cooked through and has nice grill marks.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and cut the asparagus, cherry tomatoes, bell pepper, and zucchini into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper to taste.

  3. 6

    Grill the Vegetables

Using a grill basket or skewers, grill the vegetables for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are done grilling, remove them from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables on a plate.
