Preparing the Mac & Cheese Filling

Cook the Pasta
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add Milk and Cheese
Slowly pour in milk while whisking continuously to avoid lumps. Cook until the sauce thickens. Stir in cheddar and mozzarella cheeses until fully melted and combined.

Season the Sauce
Add salt, black pepper, garlic powder, and onion powder. Stir to combine and then add the cooked macaroni to the cheese sauce. Mix well to coat all the pasta.

Cool the Mixture
Transfer the mac & cheese mixture to a baking dish and spread it evenly. Refrigerate for at least 2 hours to firm up.

Form the Bites
Once the mac & cheese mixture is chilled, scoop out small portions and roll them into balls or patties.

Dredge each mac & cheese ball first in flour, then dip into the beaten eggs, and finally coat in bread crumbs. Ensure they are well coated.

In a deep skillet or frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the breaded mac & cheese bites to the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy.

Remove the fried bites with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
