Prepare Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs and ensure they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours or overnight for best results.

    Dredge the Chicken

    In another bowl, mix the flour, salt, black pepper, and cayenne pepper. Remove the chicken from the marinade, allowing excess buttermilk to drip off, then dredge each piece in the seasoned flour until fully coated. Set aside.

Fry Chicken

    Heat the Oil

    In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Carefully add the dredged chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 6-8 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

    Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.

Make Biscuits

    Preheat your oven to 425°F (220°C).

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

    Cut in the Butter

    Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
