Marinate the Chicken
In a large bowl, combine chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Flour Mixture
In a separate bowl, mix together flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.

Dredge and Fry
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coat. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry chicken pieces in batches for about 15-18 minutes or until golden brown and cooked through. Drain on paper towels.

In a large bowl, whisk together flour, baking powder, sugar, and salt.

Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix.
