Egg Preparation

    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 10 minutes. This will make peeling easier.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface to crack the shell and peel them under running water to help remove the shell easily.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the yolks. Mash the mixture with a fork until smooth.

    Stir in the finely chopped chives or parsley into the yolk mixture until evenly combined.

    Using a spoon or piping bag, fill the egg white halves with the yolk mixture generously.
