    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This will make them easier to peel.

    Peel the Eggs

    Once the eggs are cool, gently tap them on a hard surface and peel off the shells. Rinse the eggs under cold water to remove any small shell fragments.

Filling Preparation

    Slice the Eggs

    Carefully slice each egg in half lengthwise. Remove the yolks and place them in a mixing bowl.

    Make the Filling

    Add mayonnaise, Dijon mustard, salt, and black pepper to the egg yolks. Mash the mixture with a fork until smooth and creamy.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

    Garnish

    Sprinkle the filled eggs with paprika and add chopped chives on top for garnish, if desired.
