Method

For the Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

  2. 2

    Prepare the Coating

In a separate bowl, mix together all-purpose flour and cornstarch. This will be used to coat the marinated chicken.

  3. 3

    Fry the Chicken

Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour-cornstarch mixture, shaking off excess. Fry the chicken in batches for about 10-12 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

For the Waffles

  1. 4

    Mix the Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.

  2. 5

    Combine Wet Ingredients

In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract, mixing until well combined.

  3. 6

    Combine Both Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

  4. 7

    Cook the Waffles

Preheat your waffle iron according to manufacturer's instructions. Pour an appropriate amount of batter onto the iron and cook until golden brown, typically about 5 minutes. Repeat with remaining batter.

To Serve

  1. 8

    Plate the Dish

On each plate, place a waffle and top it with a piece of fried chicken. Add a pat of softened butter and drizzle with maple syrup to taste.
