Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, combine the flour, baking powder, and salt. Whisk together until well blended.

Cut In Butter
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Add Milk and Cream
Pour in the milk and heavy cream. Stir until just combined, being careful not to overmix.

Form Biscuits
Turn the dough out onto a floured surface and gently pat it down to about 1-inch thickness. Use a biscuit cutter to cut out rounds of dough.

Bake Biscuits
Place the biscuits on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown.

Cook Sausage
In a large skillet over medium heat, crumble and cook the ground sausage until browned and cooked through, about 5-7 minutes.

Sprinkle the tablespoon of flour over the cooked sausage. Stir well to combine and cook for 1-2 minutes to remove the raw flour taste.

Add Milk
Gradually pour in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until thickened, about 3-5 minutes.

Season Gravy
Season the gravy with salt, black pepper, and red pepper flakes. Adjust seasoning to taste.
