1. Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin, shoe-string fries. Place them in a bowl of cold water and let soak for at least 30 minutes to remove excess starch.
2. Fry the Garlic
In a small pan, heat a few tablespoons of vegetable oil over medium heat. Add the thinly sliced garlic and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
3. Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and dry the soaked potatoes thoroughly. Fry the potatoes in batches until golden and crispy, about 3-4 minutes per batch. Remove and drain on paper towels. Season with salt immediately.
4. Combine and Serve
In a large bowl, toss the hot fries with truffle oil, grated Pecorino cheese, fresh herbs, and fried garlic. Serve immediately with lemon aioli on the side.
