Make the Ganache
Chop the dark chocolate into small pieces and place in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the heated cream over the chopped chocolate and let sit for 2-3 minutes. Then stir until smooth and fully combined.

Chill the Ganache
Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the ganache is firm enough to scoop.

Form the Truffles
Using a melon baller or small scoop, portion out the ganache and roll it into balls using your hands. The ganache may be sticky, so you can dust your hands with cocoa powder to make rolling easier.

Coat the Truffles
Roll each truffle in cocoa powder until fully coated. For an extra touch, you can drizzle chocolate sauce over the finished truffles.

Place the truffles in a decorative box or on a serving plate and enjoy!
