1. Make the dough

In a large mixing bowl or stand mixer bowl, whisk together flour, instant yeast, sugar, and salt. Add warm water (about 105–115°F / 40–46°C) and 2 tablespoons olive oil. Mix with a spoon until a shaggy dough forms, then knead by hand on a lightly floured surface for 8–10 minutes or use a dough hook on medium speed for 6–7 minutes until the dough is smooth, elastic, and slightly tacky.

2. First rise

Lightly oil a clean bowl with 1 teaspoon olive oil, place the dough inside, turning to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm draft-free place until doubled in size, about 60–75 minutes.

3. Shape breadsticks

Punch down the risen dough and turn onto a lightly floured surface. Divide dough into 6 or 12 equal pieces depending on desired size (for 6 larger breadsticks, divide into 6 pieces; for 12 smaller, divide into 12). Roll each piece into a 8–10 inch log for larger or 5–6 inch log for smaller sticks, tapering slightly at the ends if desired. Place sticks on a parchment-lined baking sheet about 1 inch apart.

4. Second rise

Cover shaped breadsticks loosely with lightly oiled plastic wrap or a towel and let rest for 20–30 minutes until slightly puffy.

5. Prepare topping

While breadsticks are resting, combine melted butter, minced garlic, remaining 1 tablespoon olive oil, and dried Italian seasoning in a small bowl. Brush mixture generously over the breadsticks. Sprinkle grated Parmesan and a pinch of coarse sea salt over the top.

6. Bake

Preheat oven to 400°F (200°C). Bake the breadsticks on the middle rack for 12–15 minutes for larger sticks (or 9–11 minutes for smaller) until golden brown on top and cooked through. Rotate pan once halfway through baking for even color.

7. Finish

Remove from oven and brush again with any leftover garlic-butter. Let cool for 5 minutes on the baking sheet, then transfer to a basket or serving platter.

Tomato Sauce (dipping)

8. Sweat aromatics

In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add finely chopped onion and cook, stirring occasionally, until softened and translucent, 4–5 minutes. Add minced garlic and cook 30–45 seconds until fragrant but not browned.

9. Build sauce

Stir in tomato paste and cook 1 minute to remove raw taste. Add crushed tomatoes, sugar, dried basil, dried oregano, red pepper flakes, salt, and black pepper. Stir to combine.

10. Simmer

Bring sauce to a gentle simmer, reduce heat to low, and simmer uncovered for 12–18 minutes, stirring occasionally, until slightly thickened and flavors meld. Taste and adjust salt or sugar if needed.

11. Finish

Remove from heat and stir in fresh basil if using. Transfer sauce to a small dipping bowl or ramekin and keep warm until serving.
