    Prepare the Chicken

    If not already prepared, cook and shred the chicken. Season with salt and set aside.

    Make the Avocado Salsa

    In a bowl, mash the avocado and mix with lime juice, chopped cilantro, and salt to taste. Set aside.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of chipotle black bean purée. Take a corn tortilla, fill it with pulled chicken and a mix of cheeses, and roll it up. Place seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all tortillas are in the dish, pour your choice of salsa (verde, rojo, or Christmas) over the top and sprinkle with any remaining cheese.

    Bake

    Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.

    Garnish and Serve

    Remove from the oven, let it cool for a few minutes, and top with crispy tortilla strips, avocado salsa, and extra cotija cheese before serving.
