Prepare the Filling
In a large bowl, combine pulled chicken, rajas, corn, black beans, pico de gallo, and Chihuahua cheese. Mix well until all ingredients are evenly distributed.

Assemble the Spring Rolls
Lay a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon 2-3 tablespoons of the filling mixture onto the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form a spring roll. Seal the edge with a little water.

Fry the Spring Rolls
In a deep pan, heat oil over medium heat. Once hot, fry the spring rolls in batches until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Sauces
In a small bowl, mix together parmesan-asiago cream, green chili pesto, and chipotle gastrique. Adjust seasoning to taste.

Serve the spring rolls hot with the prepared sauces on the side.
