Preparation
1. Prepare the Tamale Dough
In a large bowl, combine masa harina, baking powder, and salt. Gradually add chicken broth and vegetable oil, mixing until a soft dough forms. Fold in diced green chiles.
2. Prepare the Seafood Filling
In a skillet over medium heat, combine shrimp, lobster, crab, and scallops. Sauté for 3-5 minutes until seafood is cooked through. Add sherry and simmer for an additional 2 minutes. Set aside to cool.
3. Assemble the Tamales
Take a corn husk, spread a spoonful of tamale dough on it, add a spoonful of seafood filling, and then top with another spoonful of dough. Fold the sides of the husk in and roll it up tightly. Repeat with remaining ingredients.
4. Steam the Tamales
Place tamales upright in a steamer pot. Steam over boiling water for 1-1.5 hours or until the masa separates easily from the husk.
5. Prepare the Sherry Cream Sauce
In a saucepan, combine heavy cream and remaining sherry. Simmer over low heat for about 10 minutes, stirring continuously until slightly thickened.
6. Serve
Serve tamales hot with sherry cream sauce drizzled over the top.
