In a skillet, heat the olive oil over medium heat. Add the sliced poblano peppers and minced garlic. Sauté until the peppers are tender and slightly charred, about 5-7 minutes. Season with salt and black pepper to taste.

In an oven-safe dish, combine the sautéed rajas with the southwest cheese blend. Stir to combine and spread evenly across the dish.

Place the dish under the broiler for about 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.

Remove from the oven and top with pickled Fresno peppers.
