    Prepare the Black Beans

    In a saucepan, heat the black beans over medium heat. Add salt and pepper to taste. Let simmer for about 5 minutes until warmed through.

    Fry the Eggs

    In a skillet, heat olive oil over medium heat. Crack the eggs into the skillet and fry until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

    Prepare the Tortillas

    In another skillet, warm the corn tortillas for about 30 seconds on each side until pliable. You can also make a quesadilla by placing a tortilla in the skillet, adding some cotija cheese, and folding it in half until the cheese melts.

    Assemble the Huevos Rancheros

    On each warmed tortilla, layer the black beans, a fried egg, salsa verde, and salsa roja. Top with crumbled cotija cheese and a dollop of sour cream. Add slices of avocado on the side.

    Serve immediately while hot, garnished with any remaining salsa and avocado.
