1. Prepare the Tortillas

Cut the corn tortillas into quarters. Heat vegetable oil in a large skillet over medium heat. Fry the tortilla pieces until crispy and golden brown. Remove them from the oil and drain on paper towels. Season with salt.

2. Cook the Eggs

In the same skillet, crack the eggs and fry them sunny-side up or to your preference. Season with salt and set aside.

3. Assemble the Chilaquiles

In a large bowl, combine the crispy tortillas with salsa verde, making sure they are well coated. Add the pulled chicken and black beans, mixing gently.

4. Serve

Plate the chilaquiles and top with fried eggs, cotija cheese, crema, diced avocado, pickled Fresno chilies, and shaved red onion. Serve immediately.
