Cooking Instructions

  1. 1

    Prepare the Pork

In a large pot, heat some oil over medium heat. Season the pork shoulder with ancho chili powder, salt, and pepper. Sear the pork on all sides until browned, about 8-10 minutes. Remove the pork and set aside.

  2. 2

    Sauté Aromatics

In the same pot, add diced onion and minced garlic. Sauté until softened, about 3-4 minutes.

  3. 3

    Braised Pork

Return the pork to the pot, add vegetable broth, and bring to a simmer. Cover and cook on low heat for about 3 hours, or until the pork is tender and easily shredded.

  4. 4

    Make Honey Black Bean Puree

In a blender, combine black beans, honey, and a pinch of salt. Blend until smooth. Adjust seasoning if necessary.

  5. 5

    Prepare the Tortillas

Warm the corn tortillas in a dry skillet until pliable.

  6. 6

    Cook the Eggs

In a separate skillet, fry the eggs to your preference (sunny side up or over easy).

  7. 7

    Assemble the Stack

On each tortilla, layer pulled pork, honey black bean puree, Chihuahua cheese, and a fried egg.

  8. 8

    Garnish

Top with salsa verde, cotija cheese, crema, and avocado salsa (made by mixing diced avocado, lime juice, and chopped cilantro). Serve immediately.
