Flatbread Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the Italian flour and salt.

Combine Mixtures
Make a well in the center of the flour mixture. Pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Preheat the Oven
While the dough is rising, preheat your oven to 475°F (245°C).

Shape the Flatbreads
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a flat round shape about 1/4 inch thick.

Bake the Flatbreads
Place the flatbreads on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until they puff up and are lightly golden.

Remove the flatbreads from the oven, let them cool for a few minutes, and serve warm.
