    Prepare the crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix well, then press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    Make the cheesecake filling

    In a large bowl, beat the cream cheese and granulated sugar together until smooth. Add in the vanilla extract and sour cream, mixing until fully incorporated. Then add the eggs one at a time, mixing just until combined after each addition.

    Bake the cheesecake

    Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for about 55-60 minutes, or until the center is set but still slightly jiggly.

    Cool and chill

    Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour. Then, refrigerate for at least 4 hours or overnight to fully set.

    Before serving, top the chilled cheesecake with whipped cream and fresh strawberries. Slice and enjoy!
