    Prepare the Beans

    Rinse the red beans under cold water and soak them in a large bowl with enough water to cover them for at least 4 hours or overnight.

    Cook the Sausage and Vegetables

    In a large pot, heat a little oil over medium heat. Slice the smoked pork sausage and add it to the pot. Cook until browned. Add the diced onion, green bell pepper, and celery, and sauté until the vegetables are tender.

    Add Ham Hocks and Spices

    Stir in minced garlic, bay leaves, cayenne pepper, thyme, black pepper, and salt. Add the smoked ham hocks and drained red beans. Stir to combine.

    Simmer

    Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors meld together. Stir occasionally and add more water if needed.

    Serve

    Remove the ham hocks and bay leaves. Shred the meat from the ham hocks and stir it back into the beans. Serve the red beans over cooked rice and garnish with chopped green onions.
