    Prepare the Beans

    Rinse the red beans under cold water and soak them in a large bowl with enough water to cover for at least 6 hours or overnight.

    Cook the Vegetables

    In a large pot over medium heat, add the smoked pork sausage (sliced) and cook until browned. Add the chopped onion, bell pepper, celery, and minced garlic, cooking until the vegetables are softened.

    Add the Beans

    Drain and rinse the soaked beans. Add them to the pot along with the smoked ham hocks, bay leaves, cayenne pepper, black pepper, and salt.

    Simmer

    Pour in the water or chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, stirring occasionally, until the beans are tender and creamy.

    Adjust Seasoning

    Taste and adjust seasoning as needed with additional salt and pepper.

    Serve

    Remove the ham hocks, shred the meat, and return it to the pot. Serve the red beans over cooked white rice and garnish with sliced green onions.
