    Prepare the greens

    Wash the collard greens thoroughly under cold water to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces.

    Sauté the aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the greens

    Add the chopped collard greens to the pot and stir to combine with the onion and garlic. Pour in the vegetable broth and bring to a simmer. Cover and cook for about 30-40 minutes, or until the greens are tender.

    Once the greens are tender, stir in the apple cider vinegar, red pepper flakes, salt, and black pepper. Adjust seasoning to taste.
