Prepare the Custard
In a large bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

Soak the Bread
Dip each slice of thick-cut bread into the egg mixture, allowing it to soak for a few seconds on each side.

Cook the French Toast
In a large skillet over medium heat, melt 1 tablespoon of butter. Add soaked bread slices and cook until golden brown on both sides, about 3-4 minutes per side. Repeat with remaining bread, adding more butter as needed.

Prepare the Sauce
In a saucepan over medium heat, combine brown sugar, bourbon, and chopped pecans. Stir until the sugar is dissolved and the mixture is bubbly. Add sliced bananas and cook for an additional 2 minutes, allowing the bananas to soften slightly.

Place the French toast on plates and drizzle with the warm brown sugar bourbon sauce. Garnish with additional pecans if desired.
