    Prepare the Ingredients

    Chop the bell pepper, onion, celery, and garlic. Slice the sausage and set aside.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until softened, about 5 minutes.

    Add the Meats

    Add the sliced smoked sausage and chicken thighs to the pot. Cook until the chicken is browned on all sides.

    Add the Remaining Ingredients

    Stir in diced tomatoes, chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. Bring to a boil.

    Simmer the Gumbo

    Reduce heat to low and let it simmer uncovered for about 30 minutes, until the chicken is cooked through and flavors meld.

    Serve

    Remove bay leaves. Serve the gumbo over cooked white rice and garnish with sliced green onions.
