    Prepare the Grits

    In a saucepan, bring 4 cups of water to a boil. Slowly stir in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Add salt and butter to taste.

    Cook the Andouille Sausage

    In a skillet over medium heat, add the sliced andouille sausage. Cook until browned and heated through, about 5-7 minutes. Remove from skillet and set aside.

    Make the Creole Mixture

    In the same skillet, add a little more butter if needed. Add the diced tomatoes, chopped bell pepper, and minced garlic. Sauté for about 5-7 minutes until the vegetables are soft.

    Cook the Eggs

    You can poach, scramble, or fry the eggs according to your preference. For poaching, bring a pot of water to a gentle simmer, add a splash of vinegar, and crack the eggs into the water. Cook for about 3-4 minutes until the whites are set.

    Assemble the Dish

    In a bowl, spoon a generous serving of the grits. Top with the creole mixture and place the cooked eggs on top. Add the sausage slices around the dish. Serve with a warm biscuit on the side.
