    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced onion, red and green bell peppers, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Garlic and Corn

    Stir in the minced garlic and fresh corn kernels. Cook for another 2-3 minutes, allowing the corn to become tender.

    Add Broth and Seasonings

    Pour in the vegetable broth and add salt, black pepper, and cayenne pepper. Stir well to combine. Bring to a simmer.

    Simmer

    Reduce heat to low and let it simmer for about 10 minutes until the flavors meld together.

    Finish and Serve

    Remove from heat, stir in chopped fresh parsley, and serve warm.
