Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Season the Fillets
In a bowl, mix Cajun seasoning, salt, black pepper, garlic powder, and paprika. Rub the mixture onto both sides of the catfish fillets.

Soak in Buttermilk
Place the seasoned fillets into a bowl and pour buttermilk over them. Let them soak for at least 30 minutes to enhance flavor and tenderness.

Prepare for Frying
In a shallow dish, add cornmeal. Remove each fillet from the buttermilk, letting excess drip off, and then dredge in cornmeal, ensuring an even coating.

Heat the Oil
In a large skillet, heat oil over medium-high heat until hot but not smoking.

Fry the Catfish
Carefully place the cornmeal-coated catfish fillets into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.

Remove the fillets from the skillet and place them on paper towels to drain excess oil. Serve hot with your choice of sides.
