    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, until thickened, about 20-25 minutes.

    Cook the Bacon or Andouille

    In a skillet over medium heat, cook 2 slices of bacon or andouille sausage until crispy. Remove from the skillet and drain on paper towels.

    Cook the Eggs

    For poached eggs, bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Cook for 3-4 minutes until whites are set and yolks are still runny. For scrambled eggs, whisk 2 eggs in a bowl, season with salt and pepper, and pour into a heated non-stick skillet with 1 tbs of butter. Stir gently until cooked to your desired consistency. For fried eggs, heat a little butter in a skillet and fry the eggs until the whites are set and yolks are cooked to your liking.

    Serve

    Place the cooked grits on a plate, top with the eggs of your choice, and serve with a biscuit on the side. Add the crispy bacon or andouille sausage for extra flavor.
