Activate the Yeast
In a small bowl, mix warm water, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into small pieces. Roll each piece into a rope and cut into bite-sized pieces.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Boil the pretzel bites in batches for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Sprinkle the boiled pretzel bites with coarse sea salt and bake for 12-15 minutes or until golden brown.
