Ciabatta Bread

Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough

In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and olive oil. Stir until a sticky dough forms.

Knead

Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise for 1-2 hours until doubled in size.

Shape and Second Rise

Gently punch down the risen dough and shape it into a rectangle. Place it on a floured baking sheet, cover, and let it rise for another 30-45 minutes.

Preheat Oven

Preheat the oven to 450°F (230°C).

Bake

Bake the ciabatta for 20-25 minutes until golden brown. Let cool slightly before slicing.

Hummus

Prepare Chickpeas

Drain and rinse the canned chickpeas. If desired, peel the skins off for a smoother hummus.

Blend Ingredients

In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, salt, and ground cumin. Blend until smooth.

Adjust Consistency

If the hummus is too thick, add water one tablespoon at a time until desired consistency is reached.

Taste and Adjust

Taste the hummus and adjust seasoning if necessary, adding more salt or lemon juice to taste.

Garnish

Prepare Garnish

Chop the fresh parsley finely. Drizzle olive oil over the hummus before serving and sprinkle with parsley.
