Preparation
Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt. Remove the beards (the fibrous tuft) by pulling them away from the shell.
Prepare the Garlic
Peel and finely chop the garlic cloves.
Chop the Parsley
Finely chop the fresh parsley leaves, discarding the stems.
Prepare the Lemon
Cut the lemon into wedges for serving.
Cooking
Heat the Skillet
In a large skillet, melt the clarified butter over medium heat until hot. Add the chopped garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
Add Mussels
Add the cleaned mussels to the skillet, tossing them in the garlic butter. Sprinkle with smoked paprika, salt, and black pepper.
Cover and Cook
Cover the skillet with a lid and let the mussels cook for about 5-7 minutes, or until they open up. Discard any mussels that do not open.
Serving
Serve
Transfer the mussels to a serving dish and serve with lemon wedges on the side for squeezing over the top.
