For the Sherry Jus

Preparation

Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Sweet Potatoes

Peel and cut the sweet potatoes into chunks. Toss them with 1 tablespoon of olive oil, salt, and black pepper in a bowl.

Prepare the Garlic

Peel the 20 cloves of garlic and set them aside.

Roasting the Chicken and Vegetables

Season the Chicken

Rub the chicken with the remaining olive oil, salt, and black pepper. Place the chicken in a large roasting pan.

Arrange the Ingredients

Add the sweet potatoes and garlic cloves around the chicken in the roasting pan.

Roast the Chicken

Roast in the preheated oven for about 1 hour and 15 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.

Making the Sherry Jus

Deglaze the Pan

After removing the chicken from the roasting pan, place the pan on the stove over medium heat. Pour in the sherry wine to deglaze, scraping up any browned bits from the bottom.

Add Chicken Stock

Add chicken stock and thyme to the pan. Bring to a simmer and let it cook for about 10 minutes until slightly thickened.

Finish with Butter

Remove from heat and whisk in the butter until melted and the sauce is smooth.

Plate the Dish

Carve the chicken and serve with roasted sweet potatoes and garlic, drizzled with the sherry jus.
