Prepare Coleslaw

    Mix Coleslaw Ingredients

    In a large bowl, combine the shredded green cabbage and carrots.

    Add Dressing

    In a separate small bowl, mix the vegan mayonnaise, apple cider vinegar, sugar, salt, and black pepper until fully combined.

    Combine

    Pour the dressing over the cabbage and carrot mixture, and toss until all the vegetables are well coated. Set aside to marinate for at least 15 minutes.

Assemble Sandwich

    Prepare the Bread

    Take two slices of whole grain sandwich bread and spread 1 tablespoon of vegan mayonnaise on one side of each slice.

    On one slice of bread (mayo side up), layer the sliced plant-based turkey, followed by the provolone cheese, and then a generous portion of the coleslaw.
