Method
Preparing the Sticky Rice

Soak the Rice
Place the glutinous rice in a bowl and cover it with water. Let it soak for at least 4 hours or overnight for best results.

Steam the Rice
After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 25-30 minutes, or until the rice is tender.

Prepare the Coconut Mixture
While the rice is steaming, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt in a saucepan. Heat over medium heat until the sugar dissolves, but do not let it boil.

Combine Rice and Coconut Mixture
Once the rice is done steaming, transfer it to a large bowl. Pour the coconut mixture over the hot sticky rice and gently fold to combine. Cover and let it sit for about 30 minutes to absorb the flavors.
Preparing the Mango

Slice the Mango
Peel the ripe mangoes and slice them into thin strips or wedges. Set aside.

Make the Coconut Sauce
In a small saucepan, combine 0.5 cup of coconut milk, 1 tablespoon of sugar, and a pinch of salt. Heat over low heat until the sugar dissolves. Remove from heat and set aside.
Serving

Plate the Dish
To serve, place a generous amount of the sticky rice on a plate, arrange the mango slices on the side, and drizzle with the optional coconut sauce if desired.
