Preparation of Pork Skewers

    Prepare the Marinade

    In a bowl, mix together the soy sauce, brown sugar, minced garlic, grated ginger, lime juice, salt, and black pepper until the sugar is dissolved.

    Marinate the Pork

    Cut the pork tenderloin into 1-inch cubes and add to the marinade. Toss to coat well, cover, and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare Skewers

    Thread the marinated pork cubes onto the soaked skewers, leaving a little space between each piece.

Preparation of Peanut Sauce

    Mix Sauce Ingredients

    In a saucepan over medium heat, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, chili paste, minced garlic, and water. Stir until the mixture is smooth and heated through.

    Adjust Consistency

    If the sauce is too thick, add a little more water to reach desired consistency. Remove from heat and set aside.

Grilling the Skewers

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.

    Serve

    Remove the skewers from the grill and serve with the peanut sauce drizzled over the top or on the side for dipping.
